Pav Bhaji

Namaskara !

Pav Bhaji (Pao) ; an all time fav of young and the old alike. Not oily but wholesome and healthy…… Pav Bhaji is rich in carbs (healthy of course !).

Pao in Marathi means bread, the word Marathi borrowed from portuguese pão (lit., “bread”).

Ingredients: Serves 4

For Bhaji:

  1. Onions – Finely Chopped – 2
  2. Tomatoes – Chopped – 4
  3. Potatoes – Boiled – Mashed – Medium Sized – 3
  4. Green Peas – Shelled- 3/4 Cup – 100 gm
  5. Carrot – diced small – medium sized carrot – 1 Cup
  6. French Beans – Chopped – 12-15 – 1 Cup
  7. Cauliflower* – Washed in hot water – Chopped – 12-15 florets – 1 Cup
  8. Capsicum (Green Bell Pepper) – Chopped- 1 Cup
  9. Ginger – Chopped – 1″inch piece
  10. Garlic – Chopped/Crushed – 5-6 cloves
  11. Green Chillis – Slit- De-seeded – Chopped – 2
  12. Lemon Juice – 2 Tsp
  13. Oil – 2 Tbsp
  14. Butter – Unsalted – 1/2 Tbsp + 1 Tbsp for serving

Masalas:

  1. Pav Bhaji Masala – 2 1/2 Tsp
  2. Dhania Powder – (Coriander seed Powder) – 1 Tsp
  3. Red Chilli Powder – 1 Tsp
  4. Salt
  5. Jeera Powder – 1 Tsp

For Pav:

  1. Pav – 12
  2. Butter – 2 Tbsp

Method:

  1. Heat oil and 1/2 Tbsp butter in a pan. Add the onions and saute till onions turn pink.
  2. Add the ginger and garlic. Saute for a minute. Add the green chillis.
  3. Add all the vegetables except tomatoes.
  4. Mash the vegetables with a potato masher.
  5. Add the tomatoes. Cover the pan with a lid till the tomatoes release water.
  6. Add salt and all the masalas.
  7. Keep mashing the curry (Bhaji) till the vegetables cannot be distinctly recognized.
  8. Bring the curry to a semi-solid consistency. Add water or vegetable stock if required.
  9. Add the lemon juice and mix well. Mash more if required.
  10. Heat a tawa. Roast the Pav with butter smeared/applied on them.

To serve:

  1. Place 2 pavs in a plate.
  2. Pour some curry (Bhaji) on the side.
  3. Add a small dollop of butter on the Bhaji.
  4. Place some onion roundels and lemon slices on the side.
  5. Enjoy the mouth-watering snack; hot.

Note:

  1. The pav must be fresh and soft.
  2. *Cauliflower is to be washed in hot water with salt (and turmeric).
