Pineapple Mango Twistie

Namaskara !

Guess what time is it ? No not the clock time….. But it’s the time to twist !! with some pineapple mango twistie… Interesting eh? The summer is almost over and the monsoon is here and I notice that I haven’t posted any mango recipes. So here’s one to the “king of fruits” !

Ingredients: Serves 2

  1. Pineapple Juice – Fresh – 200 ml or 1 Large Bowl
  2. Mango Pulp – Fresh – 1 Cup
  3. Salt – 1/2 Tsp
  4. Sugar – 2 Tbsp
  5. Lemon Juice – 1 1/2 Tsp
  6. Fresh Cream – 3 Tbsp
  7. Crushed Ice – As Required

  1. In a blender, blend the mango pulp with the sugar to get a thick mango pulpy paste.
  2. Add the salt, pineapple juice and lemon juice. Blend again.
  3. Add the crushed ice and blend at low speed once.
  4. Pour in the cream.
  5. Gently mix with a folding action or blend at low speed again if cream is very thick.
  6. Remove from the blender and chill.

To Serve:

  1. In a plate, take some sugar powder.
  2. Take a long stemmed glass, immerse the rim in lemon juice.
  3. Now immerse the glass rim into the sugar powder.
  4. There you go, a snowy rim…
  5. Pour the chilled mock-tail into the snowy stemmed glass.
  6. Pour some cream on top and garnish with a mint leaf and simply enjoy !!

Culinary Secrets:

  1. You could add a dash of raspberry or strawberry syrup to make the mock-tail more mock-tailish…
  2. You could make this with ready pineapple juice, like the ones from a bottle or carton. But the fresh juice is simply the best…. So holds good for the mango pulp as well.
